Berry Pecan Crumb Cake Recipe – Glam Radar

So I woke up extra early this morning to make sure that I made something special for my mom for Mother’s Day. I know Mother’s Day isn’t until Sunday but you know what it should be Mother’s Day everyday! So I decided to pamper her this morning with some morning crumb cake to go with her coffee and she was so surprised!!!! Trust me it is always a smart idea to surprise your loved ones when they least expect it. I found this recipe on Pinterest but I changed up some of the ingredients and this beautiful masterpiece appeared in my oven baked and ready to eat. Happy early Mother’s Day to all those amazing mother’s who definitely need to be appreciated everyday!
What You Need Topping: 1/2 cup chopped pecans 1/3 cup of sugar 1 tsp of cinnamon 1/4 cup of flour
3 tbsp cold unsalted butter
Cake: 2 cups of all purpose flour 1 cup of sugar 2 tsp of baking powder 1 tsp of salt 1/2 tsp of cinnamon 2 eggs 1/2 cup of canola oil 1 cup of whole milk 1 tsp of vanilla
1 cup of blackberries and raspberries
What You Need To Do
Preheat the oven to 350 degrees and then grease an 8 inch cake pan with non stick cooking spray. To make the topping just add all of the ingredients in a bowl and then crumble everything together with your hands. Once it has mixed together just set it aside. For the cake shift together the flour, sugar, baking powder, salt, and cinnamon. Then in a separate bowl whisk together the eggs, oil, milk, and vanilla. After that slowly mix the dry ingredients with the wet ingredients. Pour the batter into the cake pan and then top it with berries and nut mix. Bake in the oven for 50 minutes then once it is done take it out to cool for about a half hour. Once it is done just cut a slice and serve.
