Gin Rickshaw cocktail with Basil Syrup :Woohoo! It’s Friday! Not only is it Friday, but it’s really, really nice outside! I mean, I rarely need a reason to celebrate the start of the weekend, but when the weather forcast is above 70°F for the whole weekend, I think it’s time we get excited! I am so looking forward to soaking in the fresh air, visiting the market (and crossing my fingers that I see rhubarb) and just plain having a bit of time to relax.
This week’s happy hour is the kind of drink that’s just makes you want the sun to shine a little brighter. I never new lime, basil and gin could taste so good.

Rickshaw Cocktail Recipe with Basil Syrup and lime juice:
from mix shake stir
makes 1 cocktail
2 oz gin
1 oz fresh lime juice
1 oz basil syrup (recipe below)
fresh basil for garnish
Place ice in a cocktail shaker and add gin, lime juice and basil syrup. Shake vigorously and strain into a rocks glass.
Garnish with fresh basil leaves. Cheers!
makes about 1 1/2 cups
1 cup sugar
1 cup water
1/2 cup loosely packes fresh basil leaves
In a saucepan over medium heat, combine the sugar and water and bring to a boil, stirring until sugar is dissolved.
Add the basil leaves and simmer for 5 minutes.
Remove from heat, cover and let stand at room temperature for 8-12 hours.
Strain into a glass jar, cover ad refrigerate until needed.
