Curry Veggie Omelet with Turkey

Good morning friends!
It is Thursday which means it is one day away from Friday and one day away from a long weekend.  Now if that does not put a smile to your face I don’t know what will work for you ha ha.  Not only is it Thursday but it is also the first day of September!  Let me say I can not complain about September 1st right now because this morning has to be one of the Best Possible Mornings ever (BPM)!  I do not know if it was the good news I heard this morning or how happy I felt to be alive but whatever is I hope it never stops.  My favorite Sirius Radio channel BPM was playing the best music ever which had me dancing in the car and getting starred at by an old couple in a Nissan.  I bet they were thinking “How the hell can this little girl listen to such loud music, dance, and drive?”  Well anyways this fabulous morning had me in the mood for some yummy food as well so I have two amazing recipes I made today and I hope you enjoy them!  The first is my yummy Curry Veggie Omelet that I had for breakfast and for lunch I made my Go Green Go Lean Turkey which I cant wait to eat!
Curry Veggie Omelet with Turkey

Curry Veggie Omelet
Ingredients
1 Whole Egg
2 Egg Whites
Diced Tomatoes
Chopped Mushrooms
Sliced up Onions
Baby Spinach
Cumin
Coriander
Curry
Lemon

Directions
Crack the eggs in a small bowl and whisk them together.  Add a dash of cumin, coriander, curry, and a squeeze of lemon.  Then keep whisking all the ingredients together.  On a non stick pan over medium heat add the onions and mushrooms and let them cook for about 2 minutes until softened.  Then add the eggs, tomatoes, and spinach.  Once the eggs are almost fully cooked fold the omelet half way and flip it.  Then serve!

Go Green Go Lean Turkey
Ingredients
Lean Ground Turkey
Chopped Zucchini
Chopped Mushrooms
Spinach
Scallions
Mrs. Dash Garlic and Herb Seasoning

Directions
On a non stick pan over medium heat add the zucchini, mushrooms, scallions, and ground turkey.  Add some Mrs. Dash seasoning and begin to mix all ingredients together.  Once the ground turkey has fully cooked add the spinach and stir it around and it will wilt and cook quick.  You can eat this alone or over some brown rice.
