Chocolate Banana Vegan Cake – Glam Radar

One of my best friends in the whole world is a vegetarian and I never got the opportunity to make her some special desserts.  Well, I finally got the chance to this past weekend on Sunday when she came over for a photo shoot she had planned.  Did I mention she is an amazing hair stylist and has been doing my hair for years.  She is the only person I trust with a pair of scissors near my hair.  Anyways, since she was coming over I found this amazing vegan chocolate cake recipe from Joy the Baker but I just substituted the walnuts for pecans and added some bananas in there.  I am happy I added the bananas in the cake because it was a total hit with my friend and the rest of the girls!!  Enjoy!

What You Need
9 inch bundt cake pan
2 1/4 cup of all purpose flour
1/2 cup of cocoa powder
1 1/2 cups of sugar
1 tsp of baking soda
1/4 tsp of baking powder
1/2 tsp of salt
1 cup of warm coffee
1/2 cup of vegetable oil
2 tsp of vanilla extract
3 ripe bananas peeled and smashed
1/2 cup of chopped pecans
2 handfuls of chocolate chips
Powdered sugar for garnish

Make sure that your oven rack is placed in the center and preheat the oven to 350 degrees.  Then with cooking spray grease the 9 inch bundt cake pan and set aside.  In a large bowl mix all the dry ingredients which include the flour, cocoa powder, baking powder, baking soda, sugar and salt.  Then in another large bowl mix together the wet ingredients which are the warm coffee, vegetable oil, and vanilla extract.  Then slowly mix together the wet ingredients with the dry ingredients and whisk until smooth and creamy.  Then add the mashed bananas and keep whisking.  Once you have the bananas mixed well add the pecans and chocolate chips then fold them in the batter.  Pour the mixture into the bundt cake pan and bake it in the oven for 35 minutes.  Then take it out when its done and let it cool for about 10 minutes before inverting it. Then garnish it with some powdered sugar and serve up in slices!
