White Berry Vanilla Cupcakes – Glam Radar

I love desserts as you can tell especially cupcakes.  Every once in a while I get that craving for fruit and one of my all time favorite fruits are berries.  Don’t worry mangoes and bananas you are right up there too!  Anyways I have been wanting to make a berry cupcake for a while so I decided to go with blackberries since strawberries are always the ones picked for everything.  I am an equal opportunist and the blackberries deserve their time to shine and here they are.  I do have to say they are gorgeous little chubby berries and they taste amazing!  So why not pair them with some vanilla white chocolate ganache stuffed cupcakes, right?  So I ran home, got all my ingredients, did my happy baking dance in the kitchen and here they are for your eyes only.  Sorry to be a tease but it’s not my fault you can’t taste them at least you can make your eyes hungry.
I made a vanilla cupcake then stuffed each one with a white chocolate ganache.  Now for the frosting I added some blackberry jam to the butter cream to make the blackberry butter cream frosting.

What You Need For the Cupcakes 1 (18oz) Duncan Hines French Vanilla Cake Mix Box 1 1/3 cups of whole milk 1/3 cup of vegetable oil 3 eggs 1 tsp of vanilla extract For the Ganache 1/3 cup of white chocolate chips 1 tbsp of heavy cream Frosting 4 tbsp of Seedless Blackberry Jam 2 sticks of melted butter 4 cups of powdered sugar 1 tbsp of heavy cream

What You Need To Do Preheat the oven to 350 degrees

Line the muffin pan with the cupcake liners and set it aside.  In a bowl mix all of the cupcake ingredients together until smooth and creamy.  Fill each cupcake liner 3/4 full with the batter and bake them in the oven for 20 minutes.  To make the ganache pour the heavy cream and chocolate chips in a small microwavable bowl and heat for 40 seconds.  Once its done take it out and whisk it together to make it creamy.  Place it inside a cupcake injector and when the cupcakes are done baking and have cooled down you can inject each one with the ganache.  For the frosting you beat the butter on low until crumbled then add two cups of powdered sugar and keep beating.  Then add the heavy cream and beat again.  After that add two more cups of powdered sugar and continue beating.  Finally, to add some color add the 4 tablespoons of jam and beat until it is all mixed well together.  Once you are done add the frosting to a pastry bag with a tip and frost your cupcakes.  Then for the decoration top each one with a blackberry and then eat them all!
