Garlic Shrimp with Zucchini Pasta recipe – Glam Radar

I always have an obsession with  shrimps and vegetables because they can be cooked in so many different ways.  Last year I loved to cook with butternut squash and I made so many dishes from mashed potatoes to soup.  So this year my new love is zucchini!  Wow, there are so many things you can make with zucchini that easily replace a lot of meals that are high in carbs and fat.  So for this dish I decided to make the zucchini into pasta and add some garlic shrimp to the mix.  I did not want to eat it with such a heavy sauce like alfredo or tomato so I just kept it simple and cooked everything in a garlic olive oil sauce.  You can still make this dish with whatever sauce your tummy desires so do not feel you are trapped with one option.

garlic-shrimp-with-zucchini-pasta 1/2 lb Shrimp (uncooked and peeled) 2 Zucchinis (peeled and sliced into thin strips) In a large saucepan drizzle olive oil to coat the bottom of the pan and add the garlic.  Let the garlic cook for about 30 seconds on medium high heat.  Then add the zucchini slices and toss it around in the olive oil.  In a separate pan on medium high heat as well, add some olive oil and garlic.  Let is simmer for a bit and then toss in the shrimp.  Let the shrimp cook on each side until they turn pink.  Then toss in the shrimp into the zucchini mix and add the lemon juice.  Mix everything together and then add some salt and pepper to taste then serve right away.
