Scallops in a Mango Tango Salsa with Mango Coco Smoothie – Glam Radar

Rise and Shine it’s Mango time! I would have to say one of my favorite fruits to eat has to be mango.  I am very picky with the type of mango I eat and I always get depressed when I peel one open and see the light yellow pigmentation.  That just means it is going to be an OK treat.  My favorite type is when it is juicing out as you peel it and the color is of a bright orange yellow.  That is when you know you got hooked up with one of juiciest mangos in town! So this weekend I decided to experiment with a mango I had bought and create two different meals by using just that one precious piece of fruit.  On Saturday I woke up and decided to create a tropical mango smoothie and later that day I created a fabulous meal with seared scallops in a mango melon salsa.  If you are not intrigued by now you are definitely not a mango lover like I am.  Here are the mouthwatering recipes!  Also if you are on the Paleo diet these two recipes are perfect to add to your meal plan.

Mango me Coco Smoothie Ingredients Mango slices Coconut Milk Ice Cubes

Egg white beaters (optional)

Directions
Peel and cut a mango into slices.  Take half of the slices and place it in a blender.  Then add about 2 oz. of Coconut milk and some ice cubes to the blender.  If you want to add protein you can pour some egg white beaters that have been pasteurized.  That is very important because that means you can eat them raw if they are not pasteurized you will get salmonella and that is just a disaster right there.  Blend all your ingredients together and then serve in a glass cup.  Add a little garnish of any fruit and relax and sit outside and pretend you are at the beach!  Drinking this I felt like I was on a tropical island drinking pina coladas ha ha!

Now for lunch or dinner you can get all fancy and create this amazing scallop dish that I promise you will love!

Scallops in a Mango Tango Salsa!

Ingredients 5-20 Scallops (depending on how many you want to make) Curry Powder Cinnamon Ground Coriander Salt Pepper

Oil

Mango Tango Salsa 3/4 cup of diced mango 1/2 cup of diced cantaloupe 1/4 cup of diced red onions 2 tbsp minced mint leaves smoked paprika 1/2 of a lime juiced Salt

Pepper

Directions Heat 2 tablespoons of oil on a skillet over medium heat.  Season the scallops with all the seasonings listed.  The amount of seasoning is of preference to your taste buds ha ha.  Then add the scallops to the skillet and let them cook on each side for about 2 to 3 minutes and turn.  They will turn a golden brown on top and from a nice crust. For the salsa just mix all the ingredients in a bowl and then place a generous amount on a plate and top that with the scallops.  Garnish with a mint leaf and serve it yourself.  This plate will make you look like you slaved in the kitchen for hours.  And the setup is definitely restaurant material.
