Peanut Butter Maple Walnut Oat Clusters – Glam Radar

Sometimes, all you have to do is look at an ingredient list and you just know the outcome is going to be divine. If my sweet tooth cravings aren’t satisfied, I tend to reach for chocolates and buttery-sugary fatty goodies, so I try to have healthier options on hand whenever I can. These clusters have no sugar, and they feature oats (fibre), peanut butter (protein & healthy fats), and walnuts (good for your brain). While they might be a little high on the calorie side due to the maple/agave and peanut butter, when enjoyed in reasonable quantities they’re definitely a better-for-you sweet treat than most store-bought alternatives.peanut-butter-maple-walnut-oat-clusters

Note: if you have chocolate chips on hand, feel free to add them to the mixture. I tried to make my own raw chocolate chips by whisking cocoa powder and agave nectar together, spreading it thin on parchment paper and freezing it, but the mixture never hardened. So, I used it as a chocolate dip instead. I’ve included instructions for this below in case you’d like to do the same.peanut-butter-maple-walnut-oat-clusters-recipe

What these lack in looks, I assure you they make up for in taste!

Peanut Butter Maple Walnut Oat Clusters Makes about 2 dozen small cookies Adapted from Love Veggies and Yoga

  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup or agave nectar (I used half of each)
  • 1/4 cup shredded coconut
  • 1/4 cup chopped walnuts
  • 1/2 tsp cinnamon
  • optional: chocolate chips
  • 1 tbsp cocoa powder
  • 1 tbsp agave nectar
  1. Preheat the oven to 160ºC/325ºF.
  2. Mix together the oats, peanut butter, maple/agave, shredded coconut, walnuts, and cinnamon by hand. The dough was so delicious I wanted to just eat it with a spoon!
  3. Use a teaspoon to make small cookie clusters on a baking sheet. I like my treats bite-sized.
  4. Bake for 10 minutes.
  5. Cool on wire rack.

To make the chocolate dip

  1. Whisk together the cocoa powder and agave nectar. Once the cookie clusters have cooled, dip them into the raw chocolate paste and freeze for a few minutes to allow the chocolate to set.how-to-make-peanut-butter-maple-walnut-oat-clusters

I actually preferred the cookie clusters without the chocolate so I’m glad I left a few plain!
