Mediterranean Salad With Tomatoes, Peppers, Feta – Glam Radar

This weekend at the farmers market I found great looking peppers and tomatoes to make this simple Mediterranean salad. My inspiration for this salad actually came from the brunch I had at Noteable on Sunday. They used pieces of rotisserie chicken in their salad and it was fantastic. I served the salad as a side to grilled bison burgers.
Mediterranean Salad
- 2 peppers, one red and one yellow, chopped into 1 inch chunks
- 4 to 5 cherry tomatoes, sliced in half
- 1/2 english cucumber, sliced and cut in half
- 10 black olives, pitted
- 1/2 cup goat feta, crumbled
- 1/4 cup fresh basil, finely chopped
- 1 large lemon, juiced
- 1/4 cup cold pressed olive oil
- sea salt
- pepper
Toss all the ingredients together and serve.
