Molten Lava Chocolate Cake – Glam Radar

Quite a few readers have asked me: where are all these recipes FROM? The answer is: all over the place! They’ve been collected from books, magazines, websites, friends, etc. Mum and I have been baking together since I was barely old enough to read, and we type up the tried and true, foolproof, delicious recipes and put them into binders, which is why I normally don’t know where a specific recipe is from (sorry!) We normally modify it to our own taste, though, so I hope I’m not violating any sort of copyright laws!

This ooey gooey chocolate cake is to die for. It has a cake-like outer section, but the inside is filled with delicious liquid sauce…

4 tbsp plain butter, room temperature 8 oz melted bittersweet chocolate Icing sugar for dusting (optional) img_2123 1. Preheat oven to 200ºC. 2. Generously butter 6 muffin tins (we used crème brulée cups), dust with granulated sugar, and tap out excess. Set aside. 3. Cream butter and granulated sugar in an electric mixer until fluffy. 4. Add eggs one at a time, beating well after each addition. 5. With the mixer on low speed, beat in flour and salt until just combined. Beat in the chocolate. 6. Divide batter evenly into prepared cups. 7. Place cups in oven. Bake just until tops of the cakes no longer jiggle when the pan is lightly shaken – this should be 8 to 10 minutes. Remove from oven, let stand 10 minutes. 8. Turn out cakes, place on serving plates, bottom side up. Dust with icing sugar. 9. Serve with plain whipped cream OR mix 300 ml whipped cream with 1/2 tbsp brown sugar and 1 tbsp Grand Marnier. img_2117
