Elegant Purple Velvet Cupcakes – Glam Radar

I have been baking up a storm lately but in the back of my mind I would keep reminding myself to make a red velvet cupcake.  Finally, it happened this week but instead of red velvet I decided to go for one of my favorite colors, purple!  Yep this is a purple velvet cupcake stuffed with tons of white chocolate chips and topped with a cream cheese icing and a little cute flower.  I had a blast making these cupcakes but my mother had a heart attack when she saw the disaster I created in the kitchen after the purple food coloring squirted everywhere.  I had to pause from baking and clean the mess but hey it was fun.  Anyways, this cupcake is amazing because it has all the components of a good cupcake.  First of all it is very moist with every bite then you get the chocolate chips in the mix which just makes the cupcake even more delicious. And lets not forget the perfect icing which is a cream cheese butter cream icing that compliments any velvet cake you make.  Putting these together was so much fun and making cupcakes like these just make me realize how much I love baking and photographing my work.  Hope you enjoy this post!  I used Paula Deens recipe for her red velvet cupcakes and just changed the color and added my chips.

What You Need (24 cupcakes) 2 1/2 cups of all purpose flour 1 1/2 cups of vegetable oil 2 tbsp of purple food coloring 1 tsp of white distilled vinegar 2 cups of white chocolate chips 2 (8oz) cream cheese packages 2 sticks of softened butter elegant-purple-velvet-cupcakes-recipe Preheat your oven to 350 degrees and line up your cupcake pans with liners.  In a large bowl sift your flour, sugar, baking soda, salt, and cocoa powder together.  In another bowl mix your oil, milk, eggs, food coloring, vinegar, and vanilla extract.  Then mix the dry ingredients into the wet ingredients until everything is blended well together.  Then pour the batter into each cupcake liner about 3/4 of the way full or 2/3 depending on how you like your cupcakes.  After that you can add chocolate chips to each cupcake and put as many as your would like.  Then bake them for 22 minutes in the oven and once they are done you can set them aside to cool down for about 10 minutes.  In the meantime you can make your icing by beating the cream cheese, butter, and vanilla extract together.  Then add slowly the powdered sugar and beat until its nicely whipped.  Place the icing in a piping bag and begin to frost your cupcakes! how-to-prepare-elegant-purple-velvet-cupcakes I made a cake with the rest of the batter and I wanted to show you the color of the purple velvet.  Isn’t it gorgeous!! delicious-elegant-purple-velvet-cupcakes-1
