Make this sunflower seed butter as a high protein snack packed with vitamin E. It’s great on toast with some jam on top or for dipping apples or carrot sticks!
2 c. sunflower seeds
1 tbsp olive oil
Pinch of salt
Pinch of sugar substitute (xylitol) or sugar
Preheat the oven to 180°C / 350°F / GM 4. Spread the sunflower seeds on a non-stick baking tray and put into the oven for approximately 10-15 minutes, you should be able to smell the seeds roasting. Remove from the oven and allow to cool. Put the roasted seeds into a food processor and blend until crumbly. Add the oil, salt and sugar and continue blending until the butter is smooth.
