Chicken and Lentil Soup with Swiss Chard – Glam Radar

Making this soup is a great way to use your homemade chicken stock and some fresh vegetables you have in the fridge. I used swiss chard in the soup but you can use kale if you prefer. I had french lentils in my pantry so I threw some in; this soup would be good with white beans if you can tolerate them.  My recipe calls for a ton of chicken. I always have a package of chicken thighs on hand to use in soups and stews because it is a great way to use the dark meat and it is a less expensive cut. Also I use less chicken stock in mine because I love my soups to be thicker, like a stew.  I’m high maintenance when it comes to food.

Chicken and Lentil Soup with Swiss Chard 2 cups french green lentils 2 onions, peeled, and finely chopped 1 shallot, finely chopped lots of chicken (cooked or uncooked) I add mine at the end so it has time to cook 1 bunch of swiss card, chopped 1. Bring 6 cups of water to bowl and add lentils. Set aside for 15 minutes while preparing the remainder of ingredients. 2. In a stock pot over medium high heat, add the olive oil and saute the onions, shallots, garlic, salt and pepper and thyme. Let this cook for 15 minutes to soften. Add celery and carrots and saute for another 10 minutes. Add the white wine and let it reduce to 1/3. Add chicken stock, tomatoes and tomato paste and bring up to a simmer. 3. Drain lentils and add them to the soup. While this is simmering chop your chicken and add it to the pot. Add red wine vinegar and swiss chard and let continue to cook for a few minutes. This soup is really good with a raw parmesan cheese grated over the top before serving and a drizzle of olive oil. If you are a red meat eater, like me, this soup is great with bison sausage. If you are following the Paleo Diet leave out the lentils as they are not Paleo approved.
