Focaccia – Italian flat bread recipe :
Since I’ve been posting lots of sweet treats lately, I thought I would share the recipe for one of my favorite savory baked goods: focaccia. My first memory of trying this Italian flat bread was in Venice*: we were waiting for a boat to arrive and popped into a small shop near the water. It was there that we sampled the most delicious, moist, olive-encrusted focaccia – and ever since then, Mum and I have tried dozens of focaccia recipes in search of the perfect one. This is my current favorite – and one of the easiest – adapted from Women’s Weekly (you can see the original recipe here).
1 ½ tbsp instant dried yeast 3 cups strong bread flour 1 tbsp extra virgin olive oil Extra 2 tbsp extra virgin olive oil Extra 1 tbsp sea salt flakes 1. Place warm water into a large jug. Sprinkle over dried yeast and sugar, stir until yeast has dissolved. Cover with cling wrap and stand at room temperature for 10 minutes. 2. Place flour and salt into a large bowl. Run a whisk through the flour. 3. Make a well in the center of the flour and pour in the yeast mixture and oil. Using a wooden spoon, gently stir until a soft dough forms. Knead for 5 mins until smooth and elastic. 4. Gently press and pull dough with fingertips to cover the base of a large oiled deep oven tray, making sure dough is approx 1 cm thick. 5. Leave to rise until doubled in height (30 minutes). 6. Pre-heat oven to 200/220ºC. 7. Brush dough with extra oil. Gently press fingertips into top of dough to make holes like so – 8. Sprinkle with extra salt. 9. Place a roasting dish filled with boiling water on the bottom oven rack to create steam (a bain-marie). Cook for 25 minutes or until golden brown and top sounds hollow when tapped. We decided not to add any herbs (the original recipe calls for rosemary) this time, but sometimes we fill the bread with chopped, pitted, green olives or sun-dried tomatoes, or perhaps some basil; all of which are delicious with this bread Focaccia is delicious with olive oil and balsamic vinegar. I served the bread with some sun-blushed tomatoes as well. Needless to say, the bread disappeared before the day was over!
