oatsy-cookies1-500x343-1 So, as it turns out, 2013 is the year that I’ve caught the baking bug. Or at least, so far. And whilst what comes out of the kitchen may not always be the prettiest, I would still like to think that Mary Berry would describe it as a “good bake”. And do you know what, if I do say so myself, these cookies, the Oatsy Cookie, are a blinking good bake. Even Dan, who lives life by chocolate cookies likes these. They’re also somewhat moorish. So whilst my mother might be praising the gods that she hasn’t failed me as a cook, my waistline may not be quite so pleased. 1 desert spoon or runny honey 1 teaspoon of baking powder Heat the oven to 180 degrees Celsius and grease a large baking tray. In a large bowl, mix together the margarine and sugar until creamy and soft, and then beat in the honey. Add the egg, and the cinammon and mix well. In another bowl, combine the flour, baking powder, oats and raisins, and mix together before adding to the butter mixture. Drop heaped desertspoons of the mixture onto the baking sheet and bake in the oven for 12-15 minutes or lightly golden. Allow to cool, and together with a cup of tea, enjoy.
