Oatmeal Cookies  recipe :

Last week, I held a mini survey about my recipes to see what my readers thought. Many of you said you hadn’t tried any of my baked goods for yourself because (1) the measurements were in grams rather than cups and (2) because of dietary restrictions. I took your suggestions on board and decided to post one of my favorite recipes, these delicious oatmeal thins. They are incredibly quick and easy to make and you don’t even need a mixer! There aren’t any eggs in the ingredients list either, which I hope will please some of you. Perfect for the cookie jar (although I can’t guarantee they will last long in there!)IMG_3731

Arranged them in this checker board-like fashion and added the cinnamon stick –if you’re a fan of 
cinnamon (& who isn’t?!) you could try adding a pinch of cinnamon to the recipe, too.IMG_3725

½ cup flour
1½ cups rolled oats
1/4 cup superfine sugar
½ tsp baking soda
1/4 pound butter
1 tbsp maple syrup (I used golden syrup instead)
Preheat oven to 375ºF/190ªC
Mix together flour, oats, sugar and baking soda
Melt butter with the syrup and add to dry ingredients
Place teaspoons of batter 2 inches apart on greased cookie sheets
Bake for 8-10 minutes
Let stand 1-2 minutes before removing to racks to finish coolingIMG_3729
