No-Bake Cheesecake recipe – Glam Radar

Have you ever tried No Bake ¬†Cheesecake? If you haven’t I’m sorry, but I got to tell you “GO AND TRY IT”!…I mean “BUY THE INGREDIENT AND COOK IT” ūüėõno-bake-cheesecake

The first and only cheesecake I have tried is the Strawberries one which is a piece of heaven(because strawberries are my favorite fruits and it is with cheesecake, duh)! 2 of our distant cousins have a restaurant and we buy it there, I can tell you for sure they make one of the best Cheesecakes ever! I asked them to tell me the recipe since cheesecake that they make is one of my top deserts, but unfortunately they didn’t! For good and strong reasons which I get, but I got to tell you I was a bit¬†jealous¬†about this fact!…Anyway searching in net for some easy recipes(I don’t prefer difficult recipes in something I haven’t cooked before) about cheesecake; I found a lovely site with awesome recipes and I found there one of the easiest cheesecake recipes ever, so I didn’t think it twice and went out to buy ingredients. There are 2 ways of cooking cheesecake : baking or without baking! I prefer the one without baking, actually I didn’t know that until surfing the net!

We had company the day I made this recipe(I mean today :D) and to be honest(I always do) I did few things differently because I didn’t have much time! First of all the melted butter/margarine mustn’t be hot when mix it with biscuits as I did and you should wait for 3 hours until serving, I didn’t have time so I waited just 2 hours! So sorry for that and please try not to make my mistakes(even though they weren’t made in purpose) I also made this recipe with Mascarpone cheese, I didn’t know that you could use Mascarpone cheese for Cheesecake(you can use both, Mascapone or Philadelphia), I knew it with Philadelphia but since the recipe I saw was with Mascarpone I thought to give it a try! Next time I’m making it with Philadelphia cheese and see the difference between it! Also something i should say : I’m using a big cake tin so I doubled the size; so If you my recipe looks big(as size) to you than divide by 2 every single ingredient! Now please let me shut up (:P) and let’s go on with recipe : Ingredients for no-bake cheesecake:

  • 24 Digestive biscuits (you can use other kinds 2, like: Graham crackers, Ginger biscuits…)
  • 1000 gram cream cheese (I’m using Mascarpone this time, you can use 2 Philadelphia…)
  • 500 gram cream (I’m using whipping cream, you can also use : sour cream, fromage blanc, fromage frais…)
  • 150 gram butter or margarine (sweetened)
  • 4 table spoon sugar (optional)
  • 2 tea spoon lemon juice (optional)
  • 2 tea spoon vanilla essence (optional)no-bake-cheesecake-1-1

¬†For decoration : I’m using blackberries jam, my favorite jam and my mum makes the one(it is her jam than in the picture). You can use whatever you like on top. You can use different fruits, jam and fruits! Be creative!¬†no-bake-cheesecake-2 ¬†For cheesecake you need a cake tinno-bake-cheesecake-3 ¬†And a food processor(I’m using this one) or a polythene bag with a rolling pinno-bake-cheesecake-4 Crush the biscuits in food processor( you can also place them in a polythene bag and crush them to bits with something heavy like rolling pin etc)no-bake-cheesecake-5 ¬†no-bake-cheesecake-6 To make the cheesecake base mixture, melt the butter or margarine and in a bowl mix well the crushed biscuits with melted butter/margarine(do it with your hand or a wooden spoon and the butter/margarine mustn’t be hot)no-bake-cheesecake-8no-bake-cheesecake-9no-bake-cheesecake-10no-bake-cheesecake-12 ¬†Pour the base mixture into the tin and press it flat and even (will your hand or any cooking tool which is flat, you can use even the bottom of a water glass or whatever glass) ¬†Leave it in the fridge while preparing the filling.no-bake-cheesecake-13no-bake-cheesecake-14no-bake-cheesecake-15no-bake-cheesecake-16no-bake-cheesecake-17 In a bowl(it must fit all the left ingredients) add: cheese, cream, sugar, lemon juice and vanilla extract(if you’re are using the three optional ingredients) until smooth. If you find it hard like to mix it with hand mixer try it with a dish spoon.(not an electric mixer, the article said so)no-bake-cheesecake-18no-bake-cheesecake-20no-bake-cheesecake-21no-bake-cheesecake-22no-bake-cheesecake-23no-bake-cheesecake-24 Take the base, pour the mixture onto the cake base. With a spoon or a spatula try to make the surface smooth. Chill in the fridge for 3 hours (to allow the cake to set)no-bake-cheesecake-28no-bake-cheesecake-29no-bake-cheesecake-31no-bake-cheesecake-32 Once the cake is set(as I said before I didn’t have time and I left it on fridge just for 2 hours), remove the tin and than decorate with jam or whatever you are using for decoration ¬†no-bake-cheesecake-33no-bake-cheesecake-34no-bake-cheesecake-35easy-no-bake-cheesecakeno-bake-cheesecake1 no-bake-cheesecake-recipeno-bake-cheesecake2 Differently : If you want to make ¬†no bake fruit cheesecake you can take half of the measure you are using and pour it into the cream cheese mix, the other half use it for decoration!
