Key Lime Pie with Blueberry Compote

All I have to say for this post is WOWZERS!  I will let the pictures do the talking.  Enjoy the recipe my beauties!

Key Lime Pie with Blueberry Compote

What You Need
1 store bought graham cracker pie crust
5 egg yolks
1 (14ounce) can of sweetened condensed milk
1/2 cup of key lime juice
2 cups of fresh blueberries
1/2 cup of granulated sugar
1 vanilla bean
sliced limes for garnish (optional)

Key Lime Pie with Blueberry Compotes

What You Need To Do
Preheat the oven to 375 degrees.  Mix together the egg yolks, condensed milk, and lime juice with an electric hand mixer.  Pour the mixture into the pie crust and bake in the oven for 15 minutes.  Once it is done take it out of the oven and let it cool.  For the compote place the blueberries, sugar, and the caviar of the vanilla bean in a medium saucepan over medium heat.  Add the vanilla bean as well.  Let it simmer and stir the sugar until it dissolves.  Simmer for about 20 more minutes until it has thickened and then pour it into a container and refrigerate it.  Make sure before serving the compote that you remove the vanilla bean.  Then cut a slice of key lime pie and top it off with some blueberry compote and enjoy!
