Homemade Strawberry Filled Crepes with Whipped Cream

Some mornings you wake up and wish you can have some delicious crepes from IHOP but you are too lazy to drive over there.  I am going to show you how to make homemade ones with all the stuff you have right in your own kitchen.  Trust me there is nothing better than homemade crepes.

Homemade Strawberry Filled Crepes with Whipped Cream

Ingredients
1 cup of all purpose flour
2 eggs
1 cup of evaporated milk
1/4 tsp of salt
2 tbsp of melted butter
1 tsp of vanilla extract
1 cup of heavy cream
1 tsp of vanilla extract
1 tbsp of confectioner’s sugar
1 cup of sugar
1 cup of water
1 1/2 cups of chopped strawberries
Powdered sugar

Directions
In a large bowl add the flour and eggs and mix them together.  Then slowly add the milk and whisk it together.  After add the salt, butter, and vanilla extract and blend it well.  Spray a pan with non stick cooking spray over medium high heat on a stove.  Pour a 1/4 cup of crepe batter onto the pan and begin to tilt the pan in a circular motion to create a perfect circle.  Let it cook for about two minutes then flip and let it cook again for another 2 minutes.  Flip the crepe over with a spatula.  Make as many as you would like.  In a chilled bowl add the heavy cream, vanilla extract, and confectioner’s sugar.  Beat it with an electric mixer for about three minutes until it begins to thicken and form peaks.  Cover the bowl and let it chill in the refrigerator.  In a saucepan over high heat add the sugar and water and bring it to a boil.  Slowly add the strawberries and reduce the heat to a simmer.  Stir it for about 10 minutes until it thickens and then set it aside.  Now to assemble your crepes.  Pour some strawberry syrup inside the crepe and roll it up like a burrito.  Then dollop some whipped cream from the refrigerator on top.  Pour some powdered sugar as well.  You can also add some maple syrup or eat it alone.
