Herbed Quinoa Salad

Herbed Quinoa Salad Recipe
This salad is great as a side dish to grilled meat, especially lamb. I load it with fresh mint, cilantro, and parsley. The flavours are brought together with a lemon vinaigrette and topped with avocado slices. I think that black olives are a great addition however, if you are not an olive lover, pumpkin seeds or pine nuts work really well.

Herbed Quinoa Salad
2 cups cooked and cooled quinoa
1/2 cup mint, chopped
1/2 cup cilantro, chopped
1/2 cup parsley, chopped
1/2 red onion, finely chopped
1/2 english cucumber, diced
1/2 cup pumpkin seeds, pine nuts or olives
1 ripe avocado, sliced
1 lemon, juiced and zest
1/2 tsp sea salt
1/4 tsp fresh cracked pepper
1 tsp Dijon or grainy mustard
1 tsp raw honey or pure maple syrup
1 tbsp apple cider vinegar
1/4 cup extra virgin olive oil

1. In a medium bowl add the juice and zest of the lemon, dijon mustard, sea salt, pepper, raw honey and apple cider vinegar. Slowly drizzle in the olive oil and whisk to incorporate.
2. Add to the bowl with the vinaigrette, cooled quinoa, chopped herbs, onion, cucumber, seeds, nuts or olives. Top with fresh avocado slices and serve.
