Healthy Chicken Veggie Dinner

There is nothing like coming home and smelling the aroma of good food roasting in the oven.  That is why I love making healthy home cooked meals it just makes me feel all warm and giddy inside.  This simple recipe I have today for you is so easy to make and its great to maintain that skinny waist.  So if you are confused on what to make tonight for dinner this is a great recipe to show off your cooking skills in the kitchen.  You never know you might impress someone special.

Ingredients
Skinless Chicken Thighs
Olive Oil
Tony Chacheres Creole Seasoning
Kosher Salt
Pepper
Rosemary Sprigs
Lemon, Juiced
Carrots, chopped
Yellow Squash, Chopped
Mushrooms, Chopped

Directions
Put all the chicken thighs in a Ziploc bag.  Add some olive oil, creole seasoning, salt, pepper, some rosemary leaves, and a whole lemon juiced.  Shake well and let it sit in the refrigerator to marinate until ready to use.  Turn the oven to 450 degrees.  Then spray some non stick spray on a skillet that is heated on medium high heat.  Add the chicken on the skillet and cook for about 5 minutes on each side.  While you are letting them cook place the vegetables in a 9×13 non stick dish.  Spread them out on the dish and season with salt, pepper, creole seasoning, and some olive oil.  Add a couple sprigs of rosemary and then lay on top the chicken.  Place it in the oven until it is fully cooked about 20 to 25 minutes.  Then serve alone or with a side of brown rice and enjoy my friends!
