Fried Apple Pie Empanadas – Glam Radar

So one Saturday my boyfriend and I were talking about food.  This makes me laugh because this has to be one of our favorite topics to talk about.  So he expressed his love for a Publix brand ice cream which was apple pie alla mode that he had few years back.  He also mentioned that it was the best ice cream he has ever had and he can never find it now.  So what does the amazing superhero girlfriend do to make her boyfriend happy?!?!?!  She makes him a real apple pie alla mode with Blue Bell French Vanilla ice cream.  And that is what I did!  I will have to admit this was my first time deep frying food and it was very challenging.  So here are some tips so you do not go through what I went through. Tip #1 Make sure that when you roll out your dough that u don’t make it too thin because it will fall apart in the fryer. Tip #2 Always make sure that your oil is bowling at the right temperature because if it is too hot it will burn whatever you are frying. Tip #3 To avoid it from burning I suggest using a temperature reader to make sure it is at the temperature that you need. Tip#4 Make sure that your rolling pin and hands have flour on them when playing the pre-made pie crusts.  If not it will fall apart and it is hard to put that back together.

Ok, now it is time for some Fried Apple Pie alla Mode Empanadas!  Kudos to the Food Network for this recipe!

Ingredients 4 tbsp of unsalted butter 1/4 cup of light brown sugar 2 Granny Smith Apples (peeled, take out the seeds, chopped) 2 Gala Apples (peeled, take out the seeds, chopped) 1 tbsp maple syrup 1/2 lemon juiced 2 tbsp ground cinnamon divided 1/4 tsp of ground ginger 1/8 tsp freshly grated nutmeg 1 box of pre-made pie crusts Peanut Oil for frying 1/2 cup of granulated sugar 1 tbsp ground cinnamon

Directions
Melt the butter in a large pan over medium heat.  Then add the brown sugar and apples and let it cook for 6 minutes.  Add the maple syrup, lemon juice, cinnamon, ginger, and nutmeg then cook for another 5 minutes.  Make sure the apples are completely soft after those five minutes.  Once they are done poor them in a bowl and let them cool.  On a floured surface roll out the dough and with a rolling pin thin it out a bit to make it bigger.  Cut out about 6 inch circles and begin to fill the inside with about a tablespoons of the apple pie filling.  Then close it up and seal it shut like an empanada and use a forks tines to seal the edges all around.  In a pot have peanut oil heated at 350 degrees.  Once it is a 350 degrees drop about 2 empanadas in there and let them cook for 3 minutes.  Then remove them from the pot and place them on a plate that has a paper towel on top of it.  In a bowl mix the cinnamon and granulated sugar and then toss the emapanada in there once it has cooled.  Let it coat all around and then serve with ice cream! Woohoo!
