My friend Katie would come over on many evenings, and we experimented with adding spices to our steaming mugs of hot chocolate. It was then that we discovered that cinnamon made a delightful addition and it soon became a regular ingredient.

I haven’t been drinking much hot chocolate lately, mainly because the foremost ingredient in any mix is usually sugar, but I needed something that would satisfy my hot chocolate craving without spiking my blood sugar levels. Also, I haven’t yet found a vegan milk substitute that I can drink ‘neat’. However, in a moment of desperation (there are certain times – of the month … – that my chocolate craving skyrockets) I raced to the kitchen and created this concoction. Sugar-free, chocolatey, and adaptable for vegan diets; I’m sure you will love it!img_4984

No, those aren’t real candies; they’re made of glass!

  • 1 cup milk (dairy or non-dairy, whichever you prefer)
  • 1-1.5 tbsp cocoa powder (don’t put too much, or else it can become bitter)
  • 1 tbsp agave nectar or maple syrup (I like it sweet)
  • 1/2 tsp cinnamon
  • optional: whipped cream, marshmallows

Throw everything into a saucepan. Whisk while it’s cooking so the cocoa powder absorbs well (whisking also makes it froth up a bit which I love). Cook till the milk boils. Then pour it into a mug, add optional toppings, and enjoy! I wish I had some vegetarian marshmallows to add on top. Maybe I can make my own…?img_4987

The little gold stars that I added on top melted before I whipped out my camera 🙁

So simple and easy – I’m glad I can now indulge in guilt-free hot chocolate whenever I want!
