Buttermilk Pancakes with Dulce de Leche Cream

Dulce de leche has officially taken over my life!  I mean is this really a bad thing?  I don’t think so and that is why I decided to make it a part of my morning treat.  I kept thinking of different ways to incorporate this delicious spread in my whole wheat buttermilk pancakes and then it just hit me.  Let it be the cream topping!  Forget whipped cream or butter spread some dulce de leche on those pancakes and dig in!
WARNING!  These pancakes are very addicting!

Buttermilk Pancakes with Dulce de Leche Cream

Dulce de Leche Cream
1 cup of heavy cream
6 tbsp of La Lecheria Dulce de Leche

Pancakes (modified from Cafe Kaila’s pancakes)
3/4 cup of whole wheat flour
3/4 cup of all purpose flour
1 tsp of baking powder
1/4 tsp of baking soda
1/8 tsp of salt
1/2 cup of buttermilk
1 tsp of vanilla extract
1 egg yolk
3 egg whites
2 tbsps of sugar
1/2 cup of water

Buttermilk Pancakes with Dulce de Leche Cream Recipe

In a large bowl whisk together the whole wheat flour, all purpose flour, baking powder, baking soda and salt.  In another bowl mix together the buttermilk, egg yolk and vanilla extract.  Then add the milk mixture to the flour mixture and stir to combine.  In a separate bowl add the 3 egg whites and with an electric hand mixer begin to beat until soft peaks begin to form.  Then add the sugar and keep beating until thick peaks form.  Then mix half of the egg white mixture into the batter and mix it well, then pour the rest in and mix.  After that add the water and stir to combine all of the ingredients well.  On a non stick cooking pan over medium heat, pour a 1/4 cup of batter and let it cook on each side for about 3 minutes and then serve.
For the cream spread pour a cup of heavy cream into a bowl and add 6 tablespoons of dulce de leche.  With an electric hand mixer begin to beat it until it becomes thick, creamy, and a light golden color.  Then spread some of it on top of your pancake and drizzle some pure maple syrup on top and enjoy!
