Easy Peach Crisp recipe – Glam Radar

Peaches are in season right now and one of my favorite desserts is peach crisp. Warm from the oven this was Aidans treat after last nights hockey practice. I used quinoa flour and gluten free oats for the topping over the peaches. Quinoa flour can be strong as it has an earthy taste, so if you want to mix the flours, use millet, sorghum or almond, they would all work. Quinoa flour is a great flour to incorporate because its high in protein. I used coconut oil which is a healthy fat and it has a high cooking temperature so baking with coconut oil is perfectly fine although butter works well too. Coconut oil is one of the healthiest fast you can use. The research compiled on coconut oil and its health benefits is very impressive to say the least. peach-crisp-recipe-1 There are so many variations on crisp topping and I play around with ingredients all the time. This time I wanted a nut free crisp. I think next time I will use half the amount of quinoa flour and incorporate shredded coconut to make up the remainder of the flour.

  • 8 or 9 peaches, peeled and cut into small wedges
  • 1 tbsp arrowroot powder
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • Topping:
  • 1 cup quinoa flour
  • 1 cup gluten free oats
  • 1/2 cup palm sugar
  • 2 tbsp maple syrup or honey
  • 1/2 cup coconut oil, flavored or unflavored
  • 1 tsp cinnamon
  • 1/2 tsp sea salt

Preheat oven to 350 degrees F. Add peaches to a 8 x 8 inch baking dish. Mix in maple syrup and arrowroot powder.

In a medium bowl, add quinoa flour, oats, palm sugar, cinnamon and sea salt. Mix this thoroughly to combine. Add in coconut oil using a fork to break down the coconut oil and incorporate it into the flour. I use my hands to get all the coconut oil worked into the flour.

Top the peaches with the flour mixture and bake until the it is bubbling around the edges and the topis golden brown about 60 minutes.peach-crisp-1
