Banana Oat Snack Bar – Glam Radar

Can you tell I have lunches to pack this week? Trying to find a balance between what their friends have in their lunch and what I pack in their lunch is challenging at times. I have compromised slightly this month by finding a balance, making treats that still resemble healthy whole food. I made these snack bars tonight and was quite surprised at how good they really are and they don’t really need to know their snack contains fiber, omega 3 from the chia seeds, some protein, healthy fats and no refined sugar. So now we all can be happy.

Banana Oat Snack Bar 1 cup gluten free rolled oats (not instant) 1 cup pecans, chopped 1 ripe banana 5 dates, soaked and chopped 2 tbsp raw honey 1 tsp vanilla 1 tsp cinnamon 3/4 tsp sea salt 2 tbsp chia seeds 3 tbsp coconut flakes

3 tbsp coconut oil, warmed

Preheat oven to 350 degrees F. Grease an 8 x 8 inch baking dish with a coconut oil.

Soak the dates in hot water for 5 minutes. Drain the water and chop. Add the banana and dates to a blender and blend until smooth. Add in the honey, coconut oil, vanilla, sea salt, cinnamon, and chia and thoroughly combine.

Stir in the oats, pecans and coconut flakes. Spread the batter into the baking dish. Bake until browned around the edges approximately 20 minutes.
