Apple Crumble – Glam Radar

Anyone who knows me will tell you that I live for fall. The smells, the sights, long walks in crisp air, and the fall harvest. My sister has loads of big juicy apples on her tree and she keeps sending bags to my house. This is an apple crumble recipe using oats, coconut sugar (which is low GI) and whole wheat flour. You can use spelt or even almond flour to keep it gluten free.

I think the most important part of making this crumble is the pan size. I used a 9 x 13 pan so that the apples cook evenly and the topping has time to brown and really get crispy. This crumble is divine, no question.

Apple Crumble 10 cups apples, peeled, cored and thinly sliced 1/2 cup coconut sugar 3 tbsp minute tapioca

1 tsp cinnamon

Preheat the oven to 350 degrees F. Butter a 9 x 13 inch baking dish. Mix the apples with the tapioca, coconut sugar and cinnamon in a large bowl then pour into the greased baking dish.

3 cups whole oats 1 cup whole wheat or spelt flour (almond flour works great as well) 1/2 cup coconut sugar 1 tsp cinnamon 1/2 cup melted butter 1/4 cup maple syrup 2 tsp vanilla

1 tsp sea salt

In a large bowl mix together the oats, flour, coconut sugar, cinnamon and sea salt. Melt the butter, add in the maple syrup and vanilla. Pour the butter mixture into the oat mixture and stir until completely combined. Evenly distribute the oat mixture over the apples and bake until golden brown approximately 40 minutes. Serve with yogurt or coconut milk ice cream.
